Abstract

Guar seed is rich in proteins containing 30 to 35 per cent crude proteins (per cent NX6'25) but its proteins have not so far been classified according to the conventional solubility classification procedure which describes the various fractions: (i) albumins (ii) globulins (iii) prolamins and (iv) glutelins.

Abstract

The subject of evaluation of foodstuffs is of growing concern because it is of great importance in their efficient and rational utilization. Proteins and amino acids form the crux of the nutritional problem and the solution partly lies in finding out the amounts of amino acids especially the indispensable ones present in the foods.

Abstract

Sweet potato (Shakar - kandi) is extensively cultivated in hot climate countries like India, China, Japan, southern parts of U. S. A. and Africa for its tuberous ischolar_mains. In its nutritive value, it is superior to potato with respect to soluble sugars and vitamin A.
